🫘 Mexican Bean Soup
Prep time: 15 mins • Cook time: ~20mins • Serves: ~5-6 • Note: Will need a 6 litre stock pot for this
Ingredients
- 1-2 tbsp organic extra virgin olive oil (EVOO): the bitter tasting, the better, in terms of polyphenol content
- 1 large white onion
- 5 cloves garlic
- 2 capsicum (1x red, 1x yellow)
- 1 tsp cumin powder
- ½ tsp smoked paprika powder
- ¼ tsp dried chili flakes
- 2x 400g tins crushed tomatoes
- 2x 400g tins beans (black bean, chickpea, pinto or kidney)
- 1 cup corn kernels
- 1 litre vegetable stock
- Generous handful fresh coriander (~30g)
Toppings:
- Corn chips
- Diced avocado
- Spring onion
- Squeeze of lime
Method
Heat EVOO in a stockpot, then add finely diced onion and cook on low-medium heat until softened.
Core and remove seeds of capsicum and peel and slice the garlic, add to the stockpot and cook a few minutes.
Add spices and cook for up to a minute, until fragrant.
Add chopped tomatoes, drained and rinsed beans, and corn.
Pour the vegetable stock over the top, bring to a boil then reduce to a simmer and cook uncovered for 10 minutes.
Roughly chop the fresh coriander leaves and mix through the soup, then remove from the heat and serve immediately.
